Ten commandments of the kitchen

by Kevin T McEneaney

When in doubt consult a cookbook, but do not be a fundamentalist.
Remember salt is your best friend, yet an overly generous amount will undo your friendship.
Never leave the kitchen unless you must make a quick foray into the bathroom.
Keep plenty of onions, garlic, and scallions in store.
Let mushrooms know you love them because one-third of your DNA remains mushroom.
Even in winter keep a small pot of your favorite herbs.
Let your mind wander in green leafy fields, for salads are essential to digestion.
Never let wood-handled knives loll in sink water.
There is no advice for those addicted to desserts.
Use olive oil and wine in moderation, for they are the elemental secret of any good cook.
